Delightful Crustless Quiche!

As you all know, I am NOT a food blogger, but once in awhile, I come up with something worth sharing.

I am trying to cut out some, not all, carbs.  I made a regular quiche last weekend because my dear best friend was here visiting and I thought it would be all….you know…fancy and stuff.  It was delicious, but I forgot to put in the fresh spinach I bought specifically for it.  See, that’s how I cook.

Anyhooo,  I decided to make another one, without a crust.  Besides, remember I had bought that fresh spinach, and it was staring me in the face every time I opened the refrigerator.  Also, my dear friend, had been telling me how she and her husband had cut out carbs and were feeling great!  Not to mention, looking fab!  We aren’t as dedicated as they are, but hey, we are cutting back.

The wonderful thing about quiche, is you can pretty much just throw in whatever ingredients you have on hand.  This one is full of mushrooms, onions, green pepper, Swiss cheese, bacon, and yes, fresh spinach.

This was so good, I didn’t even miss the crust.

Another thing I love about quiche, is it reheats really well.  Which is a good thing, because this baby
is all mine.  My husband won’t touch it with a ten foot pole, because it has mushrooms in it.
Not to worry, I am making a husband friendly version next.
Here’s my version:
1 cup sliced mushrooms
1/4 cup chopped green onions
1/4 cup chopped green pepper 
1 cup grated Swiss cheese
1 cup of fresh baby spinach  (more or less…whatever floats your boat)
8 eggs
1 cup half & half
Salt and pepper to taste
6 slices pre-cooked bacon, torn into small pieces
Preheat the oven to 350 degrees.
Saute mushrooms, onions, and green pepper in butter.  Set aside to cool.
Whisk eggs and half & half in large mixing bowl.
Stir in mushrooms, onions, green peppers and Swiss cheese.
Add bacon pieces and spinach.
Pour into a greased 9 inch pie pan.   (I used Pam)
Bake 45 minutes, and insert knife to check.  If knife comes out clean…ta-da… it’s done.  If not, bake an additional 15 minutes.  I usually check it several times, because “TOO DONE” is not good!
And remember, you can put in whatever ingredients you like!
