No Bake Reese’s Peanut Butter Cheesecake
My husband was hungry for something sweet, and he was completely out of his Little Debbie snacks. Houston…we have a problem. His snack cabinet was bare. As in EMPTY. People, this is a catastrophe. Side note: I maybe, sort of, kinda, let that cabinet get empty on purpose. Shhhhhh, don’t tell him. I decided I would rather make his sweets, you know, so I could have control over the ingredients (no offense Little Debbie). Anyhoooo, this recipe has peanut butter in it, so it’s healthy, right? So, I made this totally awesome No Bake Reese’s Peanut Butter Cheesecake! It is super easy and super yummy, however it comes with a…

Delightful Crustless Quiche!
As you all know, I am NOT a food blogger, but once in awhile, I come up with something worth sharing. I am trying to cut out some, not all, carbs. I made a regular quiche last weekend because my dear best friend was here visiting and I thought it would be all….you know…fancy and stuff. It was delicious, but I forgot to put in the fresh spinach I bought specifically for it. See, that’s how I cook. Anyhooo, I decided to make another one, without a crust. Besides, remember I had bought that fresh spinach, and it was staring me in the face every time I opened the refrigerator.…

Sweet And Savory Chili Bacon-Wrapped Chicken
I got this recipe from my sister-in-law, but I have seen it on Pinterest a lot, with many different variations. All I can say is…these are AMAZING! You can serve this chicken as an appetizer, or serve it like I do, as a whole meal. I just make a big tossed salad, and a pan of rice to go along with it. Recipe: 4 skinless chicken breasts, cut into strips 8 strips of bacon, cut in half. (if you love bacon like we do, just use the whole strip…we used the whole package of bacon!!) 2/3 cup brown sugar 2 tablespoons chili powder 1 teaspoon garlic powder black pepper In…

Mini-Zucchini Frittatas
Remember when I told you we have zucchini coming out of our ears? Well, I found a recipe that is just perfect for the overflow of the stuff. There are several things I love about this recipe: you can make it ahead, AND it’s something you can have for breakfast, lunch, or a light supper, AND it’s healthy. First, shred up enough zucchini to make three cups. Or, if you are like me, shred more and put in freezer bags. Keep frozen until you get a hankering for chocolate zucchini cake this winter. Mix zucchini with 1/4 of an onion, diced, a 1/4 cup of vegetable oil, 1/3…
