Sweet Corn From Sweet Neighbors Plus…Corn On The Cob Tips And Recipes!

    August 24, 2014 /

‘Tis the season!  The season for homegrown sweet corn!  The farmers in our area plant acres and acres of dent corn.  Dent corn is grown for cattle feed, and is a huge crop here.  But, lucky for us,  most of our farmers also a plant a patch of sweet corn in the center of their circle of dent corn,  strictly for us humans : ) Last weekend, our neighbors stopped by with a HUGE bag full of the sweetest corn I have ever tasted!                                                    …

I love a good margarita, don’t you? This past weekend my sister-in-law introduced me to a super easy and super yummy margarita. There are numerous recipes out there, but I prefer EASY! This version is probably old as the hills, but, hey it’s new to me. 1 can limeade 1 can tequila 2 beers (one of the recipes from Pinterest calls for 1 beer) Bada bing! The best margarita I’ve had in a long time! {Cheers} Follow Darcie (My Modern Country)’s board Happy Hour on Pinterest.

    Dump Cake…No Mixing Allowed!

    February 16, 2014 /

I’m sure most of you have heard of Dump Cake, but just in case you haven’t….let me share this crazy, easy, yummy recipe.  I know it’s in millions of cookbooks, and on a gazillion blogs, but I got my recipe from my mom. This is cake is perfect for a potluck, which is exactly why I made this recently.  Hence, the ugly disposable pan. One other little tid-bit…my favorite way to enjoy this cake is:  warm out of the oven and…..drum roll…a big scoop of vanilla ice cream on top.  Oh lawdy it’s good.  Only five ingredients:  1 large can crushed pineapple                …

Sweet And Savory Chili Bacon-Wrapped Chicken

    January 26, 2014 /

I got this recipe from my sister-in-law, but I have seen it on Pinterest a lot, with many different variations.  All I can say is…these are AMAZING! You can serve this chicken as an appetizer, or serve it like I do, as a whole meal.  I just make a big tossed salad, and a pan of rice to go along with it. Recipe: 4 skinless chicken breasts, cut into strips 8 strips of bacon, cut in half.  (if you love bacon like we do, just use the whole strip…we used the whole package of bacon!!) 2/3 cup brown sugar 2 tablespoons chili powder 1 teaspoon garlic powder black pepper In…

    Mini-Zucchini Frittatas

    September 15, 2013 /

Remember when I told you we have zucchini coming out of our ears?  Well, I found a recipe that is just perfect for the overflow of the stuff. There are several things I love about this recipe:   you can make it ahead, AND it’s something you can have for breakfast, lunch, or a light supper, AND it’s healthy. First, shred up enough zucchini to make three cups.   Or, if you are like me, shred more and put in freezer bags.  Keep frozen until you get a hankering for chocolate zucchini cake this winter. Mix zucchini with 1/4 of an onion, diced, a 1/4 cup of vegetable oil, 1/3…
